Tomato, Peach, and Burrata Salad Recipe

This dish combines juicy, sweet peaches and ripe tomatoes with the creamy richness of burrata, all brought together with a sprinkle of basil and a drizzle of good-quality olive oil. It’s an effortless yet indulgent dish that celebrates the flavours of the season.

Ingredients

  • 2 ripe peaches, thinly sliced
  • 3 ripe tomatoes, assorted colours if available, sliced
  • 2 balls of fresh burrata cheese
  • A handful of fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • Salt and pepper, to taste

Method

  1. Prepare the fruits and cheese: Start by slicing the peaches and tomatoes into roughly even slices. This ensures a balanced flavour profile in every bite. Place them on a large serving platter, alternating between peach and tomato slices for an attractive presentation.
  2. Add the burrata: Tear the burrata balls gently with your hands and scatter the pieces evenly over the arranged peach and tomato slices. The creamy centre of the burrata should ooze over the fruits, adding a luxurious texture to the salad.
  3. Season the salad: Sprinkle a pinch of salt and a generous amount of freshly ground black pepper over the salad. The seasoning will enhance the natural flavours of both the fruit and cheese.
  4. Dress and garnish: Drizzle the extra virgin olive oil evenly across the salad. The richness of the oil should meld with the juices of the fruit and the creaminess of the burrata. Follow with a drizzle of balsamic glaze for a touch of acidity and sweetness. Finally, tear the basil leaves by hand and scatter them on top, adding a fresh, aromatic finish.
  5. Serve immediately: This salad is best served fresh, so prepare it just before your meal. If you’re serving it at a gathering, be ready for it to be a crowd-pleaser, guaranteed to impress with both its vibrant colours and exquisite flavours.

The Tomato, Peach, and Burrata Salad is a celebration of simple, high-quality ingredients coming together to form a symphony of flavours and textures. Perfect as a side dish to your favourite grilled mains or as a standalone light meal.
