Korean Beef Ramen

There’s something incredibly satisfying about a bowl of homemade ramen. This version is packed with rich, savoury flavours, tender beef, fresh vegetables and perfectly cooked noodles, making it a comforting meal that’s surprisingly easy to prepare. It’s ideal for cooler evenings or whenever you’re craving something warm, hearty and full of flavour.

Ingredients

• 2 packets instant ramen noodles (discard seasoning sachets) 
• 300g beef mince 
• 2 cloves garlic, crushed 
• 2 tsp grated fresh ginger 
• 2 tbsp soy sauce 
• 1 tbsp gochujang (Korean chilli paste) 
• 1 tbsp sesame oil 
• 750ml beef stock 
• 200g mushrooms, sliced 
• 1 carrot, julienned 
• 2 cups baby spinach 
• 2 spring onions, sliced 
• 2 soft-boiled eggs 
• Sesame seeds, to serve 

Method

1. Heat the sesame oil in a large saucepan over medium-high heat. Add the beef mince and cook until browned, breaking it up with a spoon. 
2. Stir in the garlic and ginger and cook for 1 minute until fragrant. 
3. Add the soy sauce and gochujang, stirring to coat the beef. 
4. Pour in the beef stock and bring to a gentle simmer. 
5. Add the mushrooms and carrot, cooking for 4–5 minutes until just tender. 
6. Add the ramen noodles and cook according to the packet instructions. 
7. Stir through the baby spinach until just wilted. 
8. Divide between bowls and top with the soft-boiled eggs, spring onions and a sprinkle of sesame seeds. 

Rich, warming and packed with flavour, this Korean-inspired ramen is easy to customise with your favourite vegetables or protein. Add extra chilli if you enjoy a little heat, or finish with a drizzle of chilli oil for an extra kick.
