Ingredients
- 3 cups rocket (arugula)
- 1/2 cup fresh blackberries
- 60g goat cheese, crumbled
- 1/4 cup pistachios, roughly chopped
- 1 tbsp olive oil
- 1 tbsp balsamic glaze
- 1 tsp honey
- Salt and pepper, to taste
Method
- In a large bowl, add the rocket and gently toss to loosen the leaves.
- Scatter over the blackberries, goat cheese, and pistachios, distributing evenly for balance in every bite.
- In a small bowl, whisk together the olive oil, balsamic glaze, honey, salt and pepper until well combined.
- Drizzle the dressing over the salad just before serving. Toss lightly to coat, being careful not to break up the goat cheese too much.
- Serve immediately while fresh and crisp.
